Simon’s History

It was the summer of 1994. As a recent graduate of UT-Austin, Jae Park trekked across the US in search for the perfect place to open a coffee shop. He settled in Syracuse, NY. After two years of successfully honing his barista skills, he moved back to his beloved Austin, TX. In 1996, Simon’s Café, then called Krack A-Jack, was opened at Austin Community College (Pinnacle).  Eight years later, Simon’s Café has grown to 6 different locations in Austin.

Simon’s Mission

No matter what our menu consists of, we at Simon’s always start with the finest, freshest ingredients. We are committed to being a leader in the food industry with our steadfast belief in innovation, integrity, professionalism, profitability, solid business plan, customer satisfaction, charity, community involvement, health, and having fun. One successful store and one delighted customer at a time, we promise to continue to serve great food at affordable prices.

Simon’s Concept

With six locations scattered among Austin Community College campuses, Simon’s caters to 30,000 faculty and students. Because ACC is a 2-year college, we are aware that our actual customer base is over 30,000. Thus, we are constantly committed to catering to a wide variety of tastes and preferences. We offer everything from wraps and salads to Asian cuisine such as Korean barbeque and sushi. Gourmet coffee? Hot subs? Pizza? Fresh fruits? No problem! We offer it all. Simon’s is devoted to keeping up with national taste trends (thus, the incorporation of Asian flavors in the menu) as well as local penchants (hence, the inception of our exclusive soy-based Smoothies for health-conscious Austinites). If there is something we don’t offer, we are always open to suggestions.
